Job Description
Key Responsibilities & Duties
\n1. Production Management & Quality Control
\n- \n
- The Cultured Process: Oversee the end-to-end execution of our traditional curd-method culturing process (boiling raw milk, separating cream, setting and fermenting cream into curd overnight, churning, and slow-clarifying). Ensure the final ghee consistently achieves its signature premium aroma and granular ( danedar ) texture. \n
- Raw Milk Gatekeeping: Manage the strict inspection and fat/purity testing of incoming raw A2 milk from our select suppliers. Ensure zero compromise on raw material quality. \n
- Byproduct Optimization: Efficiently manage the high volume of high-value skimmed milk and buttermilk left over from the cream-separation process, directing its conversion into premium curd and Masala Chhas. \n
- Compliance & Hygiene: Enforce spotless sanitation and food safety standards across the facility, ensuring strict compliance with FSSAI regulations. \n
2. Operational Scaling & Expansion Strategy
\n- \n
- Standardization: Create clear, repeatable Standard Operating Procedures (SOPs) so that product quality remains perfectly identical as our production volume multiplies. \n
- Capacity Upgrades: Work closely with ownership to optimize plant layout, source higher-capacity processing equipment, and scale daily throughput smoothly toward 1,000 liters. \n
- Inventory & Logistics: Maintain tight tracking of batch records, raw materials, and premium packaging inventory (glass jars, labels, delivery supplies). \n
3. Team Leadership & Culture
\n- \n
- Floor Leadership: Supervise, train, and motivate our growing team of 5 to 15 workers. Lead by example—this is a hands-on role on an active floor, not a desk-bound corporate job. \n
- Resource Management: Minimize processing waste, optimize labor schedules, and maximize yield per liter of raw milk. \n
Required Qualifications & Experience
\n- \n
- Education: Degree or Diploma in Dairy Technology, Food Science, Food Engineering, or a related field. \n
- Experience: 3 to 6 years of hands-on experience in a dairy processing plant. Experience in small-to-mid-sized premium dairies or expanding food startups is highly preferred. \n
- Technical Expertise: Strong understanding of milk fat dynamics, curd-fermentation biology, temperature-controlled clarifying, and standard dairy testing equipment. \n
- Growth Mindset: An energetic, problem-solving professional who thrives in a growing team environment and is excited by the challenge of scaling a boutique operation into a major commercial player. \n
