Job Title: Senior Associate – F&B Operations

\nRole Overview
\nThe Senior Associate – F&B Operations is a part of core team responsible for operationalising every F&B venture RMZ enters. This role takes approved concepts from launch through to live, P&L-accountable, steady-state operation.
\nThe ideal candidate has run restaurants on the floor — managing the full operation day to day, not a single function. You own what happens on the ground: staffing, service standards, supplier management, compliance, inventory, and the daily controllables that determine whether a restaurant performs. Standalone restaurant experience is strongly preferred over hotel F&B operations.

- Operational Execution \n

- Take approved F&B concepts from launch into steady-state operation — opening readiness, staffing, SOPs, service standards, and supplier onboarding. \n
- Move fast through ambiguity — early-stage ventures require someone who can stand up an operation from scratch and run it independently. \n

- Day-to-Day Operations Management \n
- \n
- Own the operational controllables across RMZ’s F&B units — labour, inventory, wastage, vendor performance, and service quality. \n
- Be hands-on and present where the work happens; this role lives in the detail of execution. \n
- \n
- Pre-Opening & Launch \n
- \n
- Coordinate fit-out readiness, licensing and statutory compliance (FSSAI, excise, fire NOC, municipal), vendor appointment, and the pre-opening checklist alongside the VP / AVP. \n
- Manage pre-opening budgets and ensure handover from construction to operations is clean and on schedule. \n
- \n
- Cost & Inventory Control \n
- \n
- Run procurement, inventory, and cost controls on the ground, feeding accurate operational data back into the P&L. \n
- Run tight operational and cost discipline; catch problems on the floor before they reach the P&L. \n

- Partner & Operator Coordination \n
- \n
- Serve as RMZ’s operational point of contact with JV/franchise partners and on-site teams, ensuring delivery against agreed standards. \n
- Partner closely with the VP / AVP as the second half of a tight, accountable two-person team. \n

- Reporting \n
- \n
- Provide the leadership with reliable operational and cost reporting from the field. \n
- Maintain accurate records of daily controllables, vendor performance, and compliance status. \n
Skills & Experience
\n- \n
- 6–8 years as a restaurant manager with end-to-end operations responsibility — not a single function. \n
- Standalone restaurant operations experience is strongly preferred over hotel F&B. \n
- Proven track record in pre-opening, staffing, and cost/inventory control. \n
- Hands-on and present where the work happens — this role lives in the detail of execution. \n
- Ability to stand up an operation from scratch and deliver steady-state performance independently. \n
- Strong vendor management, procurement, and compliance (FSSAI, excise, licensing) knowledge. \n
- Reliable operational reporting discipline — accurate data from the field to the P&L. \n
